Sticky Chai Cookies (Made with Real Chai Blend)
This is a go-to recipe if you want a cookie that actually tastes like chai — not just cinnamon with a fancy name. Using sticky chai (like Monk’s Chai) gives it real spice, a caramel note from the honey, and a warm, chewy texture that’s just right.
Ingredients (Makes ~24 cookies):
-
1 cup plain flour
-
¼ cup caster sugar
-
¼ cup icing sugar
-
2 tablespoons sticky chai
-
½ cup unsalted butter, softened
-
½ teaspoon vanilla extract
-
Pinch of salt
DIY Chai Spice Alternative (if no sticky chai):
-
1 tsp ground cinnamon
-
½ tsp ground ginger
-
½ tsp ground cardamom
-
¼ tsp ground cloves
-
1 tbsp honey (to mimic sticky texture)
Step-by-step instructions:
Baking Instructions
- Preheat oven to 180°C and line a baking tray with baking paper.
- In a large bowl, whisk together flour, sugars, and sticky chai (or chai spice blend).
- Add softened butter and vanilla extract. Mix until a dough forms.
- Roll into small balls (about 1 tbsp each) and place on the tray.
Optional: Roll in cinnamon sugar for extra flavour and texture. - Bake for 10–12 minutes until edges are lightly golden.
- Cool on the tray for 5 minutes, then transfer to a wire rack to finish cooling.
Tip: For softer cookies, remove from oven 1–2 minutes early.

Vegan & Gluten-Free Chai Tea Cookies
This is one of my favourite ways to use chai in cooking, especially when baking for friends who are gluten-free or plant-based.These cookies are soft, lightly sweet, and packed with warming chai spice. Plus, they come together quickly with wholesome ingredients.
Ingredients (Makes ~20 cookies):
- 1 cup almond meal
- ¾ cup oat flour (or gluten-free plain flour)
- ¼ cup coconut sugar or brown sugar
- 2 tbsp ground flaxseed + 5 tbsp water (flax egg)
- 3 tbsp melted coconut oil
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 2 tbsp sticky chai
- Pinch of salt
Step-by-step instructions:
Baking Instructions
- Mix flaxseed with water and set aside for 5 minutes to form a flax egg.
- In a large bowl, mix the almond meal, oat flour, salt, and sticky chai. The sticky chai will provide all the spice you need (cinnamon, ginger, cardamom, etc.).
- Add wet ingredients and the flax egg. Stir until a dough forms.
- Place the dough in the fridge for 10–15 minutes to firm up, which makes it easier to shape.
- Scoop dough into small balls (about 1 tbsp each), flatten slightly, and place on a lined baking tray.
- Bake at 175°C for 10–12 minutes.
- Note: These cookies are delicate. Let them cool on the tray before lifting, or they may crumble.
